Can we honestly make tofu taste like scrambled eggs?
Well, yes. Because of its practically tasteless flavour, tofu is an extremely versatile ingredient and is perfect for creating whatever flavour we want. Whether we want to cut down on you daily egg intake or reduce cholesterol, these easy tofu scrambled ‘eggs’ are the way to go. Just add a few spices and nutritional yeast and this simple, almost tasteless ingredient, makes a wonderful and savoury alternative to your usualmorning scramble. They taste as buttery and creamy as the original egg-recipe… Good hum? đ
Just simply mix crumbled tofu with the right spices to the skillet, get the heating on and ‘Voila!’

They are so full of flavour – and yes, they actually taste like egg (or even better I would say). And they work perfectly as a breakfast (or a lazy Sunday brunch) or as complement to a main dish. Serve it with the suggested sides below, or bundle it up in a whole grain wrap, or on a high fibre gluten-free homemade bread for a more portable meal.

- 1 teaspoon nutritional yeast
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1 tablespoon water
- Pinch sea salt and black pepper
- Low-fat olive oil spray
- 1 clove garlic, minced
- 1 onion, finely diced
- 1 package silken tofu, very well drained
- 1 tablespoon very finely chopped parsley
- Fresh and organic tomatoes
- Cucumber slices
- Slices of avocado
- Spinach
- Mushrooms
- Black olives
- Rye bread
- In a small mixing bowl, whisk together nutritional yeast, turmeric, cumin, paprika, water, salt and pepper and set aside.
- Mist a frying pan with low fat cooking oil and place it over medium heat. Once hot, add onions and garlic, and sauté until fragrant, for about 2 minutes.
- Crumble tofu into the pan, breaking it up with your fingers. Pour seasoning over tofu and combine well, trying to colour as much tofu as possible (you will get a yellowish colour that looks exactly like egg). Cook for 2 minutes or until tofu is hot and a bit crispy.
- Toss in chopped parsley and continue to stir for another 2 minutes on low heat.
- Once cooked, serve with favourite sides and toppings.
