The best Veggie Burgers are here and are super yummy, full of “good-for-you” ingredients and can be ready in less than an hour.

Who said that veggie burgers will never be as tasty as usual meat burgers?
Whoever said that has never tried good, crunchy, healthy and yummy burgers like these ones…
To be honest, I don’t really care if they taste any close to the meat ones… In fact, I would rather if they don’t! But the resemblance here is quite inevitable due to the “bloody” colour from the delicious juicy beets.
This recipe is originally from my Rouxbe Plant-based Cooking Course, but I actually adapted it to whatever I had in the fridge and to some better/healthier ingredients that made more sense to me. Plus I wanted to give them a more Mediterranean taste… The original Rouxbe recipe calls for white potatoes and rice, and instead I used sweet potatoes (the healthiest food ever!) and tri-colour quinoa to make the burgers protein richer (and healthier and general). Also and to add a little exotic / Mediterranean touch I used fresh dill instead of sage. Also, added some sesame seeds for additional crunchiness.
Just DELICIOUS! And definitely the best burgers I have ever tried.
They are crunchy, “meaty”, rich in flavours, nourishing and have the expression “comfort-food” written all over them!
Hubby loved them so much he almost ate them all (leaving me with only 4 burgers for the pictures! Oopps…). I guess this is a good sign… 😉
They take some time to prep but are definitely worth it. But the advantage is that you can make a bigger batch and freeze them ahead of a busy week.
Enjoy them with some vegan tzatziki or just simply some mashed avocados with a fresh green salad.

- 1 cup cooked quinoa
- 1 cup cooked mashed sweet potatoes
- 1 onion
- 1 medium courgette (1 cup grated)
- 2 carrots (1 cup grated)
- 1 to 2 beetroots (1 cup grated)
- 2 tsp fresh dill
- 2 tbsp fresh parsley
- 1/2 cup nuts (almond or walnut)
- 3 cloves garlic
- 2 tbsp nutritional yeast
- 2 tbsp tamari sauce
- sea salt, to taste
- freshly ground black pepper, to taste
- 2 tsp oil coconut oil
- sesame seeds, to sprinkle the burguers
- Start by making/cooking the quinoa and the sweet potatoes.
- Dice the onion and mince the garlic. Then, using a food processor with a grater attachment, grate the courgette, carrots and beets. Place the vegetables over a strainer so you don’t incorporate any excess liquid later.
- Next, chop the fresh herbs and measure and gather the remaining ingredients.
- To cook the burger mixture, heat a large frying pan over medium heat. Once hot, add the oil, followed by the onions. Let cook for about 5 minutes or until softened and starting to brown. Then, stir in the garlic.
- Next, add the grated vegetables and stir to combine. Let cook for about 10 minutes, stirring frequently. Let this mixture cool before proceeding with the recipe.
- Once the mixture has cooled, combine with the quinoa and nuts. Pulse a few times in the food processor until coarsely blended.
- Either transfer to a large bowl or use the same frying pan to mix the burgers. Add the remaining ingredients (as well as the mashed sweet potatoes) and mix well to combine. Add the herbs. Taste for seasoning, adding salt and pepper as needed.
- Divide the mixture up into equal portions and then form into patties. Sprinkle with some sesame seeds.
- At this point, it’s best to put the patties in the refrigerator for an hour or so to firm up a bit before frying.
- To cook the burgers, heat a large fry pan over medium heat. Once hot, add the oil, followed by the burgers.
- Let cook until golden on the first side, then flip and cook on the other side.
- Alternatively, these burgers can be baked in the oven. Place the burgers onto a parchment lined tray and bake for about 15 minutes in a 350°F (175°C) oven.
- Once done, serve with your favorite garnish. It is perfect with some vegan tzatziki or just simpy mashed avocados and some fresh green salad.
- Because these burgers are gluten-free, they do not contain any filler, such as breadcrumbs. If you would like a burger that is a bit more solid, feel free to add fresh breadcrumbs. Add about 1/3 of a cup at time until the mixture stays together when you squeeze a bit in your hand.
