This is likely to be my first post of the year.
2016 was the beginning of a new life… a new journey… different choices and the discovery of a whole new world of flavours, textures, fragrances… So nothing better than starting the year with a beautiful Greek-Mediterranean inspired recipe.
So let me tell a bit about what inspired me this time:
Last June I went away with my dear friend Ines to my favourite hiding place in the Greek Islands – to more be precise, to a small fishing village on the northern coast of the island of Crete, Elounda. I have been going to this place for a few years now and it is the most wonderful place on earth. So it was easy to convince her to come along and spend some fantastic and relaxing days there with me… Just the two of us, eating the delicious Cretan food and enjoying the magnificent weather and stunning panoramic views over the bay of Elounda.
To me Cretan Food is the best in the world – and it’s certainly the healthiest – that’s official!
The best thing about the Cretan food is its simplicity. No overpowering spices or cooking processes – just flavour of the fresh, locally grown produce. In Crete it’s all about long hours seating at the table, sipping a good wine (or something a little stronger like Raki), whilst contemplating the magnificent sea views. All this combined make eating the Cretan way such a satisfying and magical experience.
I remember our delightfully sun kissed breakfasts with a view to the Aegean Sea. The quietness of this naturally beautiful area, the crystal clear waters and the hospitable Cretans… Just so many good memories that I can´t wait to relive.
One of the things my friend used to have for breakfast every morning was tahini on toast. I kept saying every morning that having tahini for breakfast was a bit too much… (I thought… a bit too heavy to have in the morning). But guess what?! She was absolutely right. The combination works perfectly. So I decided to recreate that so very clever combination of ingredients and make these fantastic and super decadent breakfast toasties with banana (and a few more things). They are easy. They are completely satisfying. Very simple to make with only a few ingredients that recreate perfectly the typical Greek-Mediterranean flavours that we all love so much.

- 2 slices gluten-free bread of choice
- 2 Tbsp. tahini
- 1 banana
- Tbsp. gluten-free granola or mixed nuts/seeds
- Maple syrup
- Toast bread, then spread with tahini. Top with sliced banana and sprinkle on toppings of your choice.
