Avobowls – Mexican Guacamole my way

End of story – too much of a delicious avocado bowl (aka ‘guacamole*) is never enough. And this time, I am bringing you the ultimate “avobowl” recipe. It’s un-doubtfully the best guacamole you’ll ever try and it’s  so easy and super fast to make. 

We all love Mexican recipes and we have all certainly tried many Mexican restaurants but I can tell you that this is the freshest and juiciest way of enjoying our “oh so special” guacamole.

In case you didn’t know, guacamole, is a originally Mexican dip made from avocados and all you really need to make a delicious guacamole is perfectly ripe avocados, salt, pepper, a little lime or lemon juice, olive oil, chopped coriander, onion and tomato.

Once you try it you’ll be addicted, especially when served with sweet potato chips…. Or alternatively, serve it with these amazing oatcakess or on top of these loaded sweet potatoes with chilli.

It will surely “take you higher than you’ve ever known and then drive you down to your knees”…

Avobowls - Mexican Guacamole
A delicious and fresh guacamole recipe served better with sweet potato chips

  1. 1 perfectly ripe avocado,
  2. 1 large and juicy vine tomato,
  3. 1 lime, juiced
  4. handful fresh coriander,
  5. 1/2 red onion,
  6. 1 Tbsp. good olive oil
  7. 1 pinch of sea salt and black pepper
To serve (optional)
  1. sweet potato chips
  2. some sliced cherry tomatoes
  1. Cut avocado in half, peel it (so that you can use the skin later) and remove the stone gently. Scoop out the flesh with a spoon. Place in a bowl.
  2. Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.)
  3. Chop the onion, tomato and coriander and combine with the mashed avocado. Add salt, pepper, lime juice and olive oil and mix it all gently.
  4. Adjust to your taste and place them in the previously reserved skins
  5. Sprinkle with some more lime juice, coriander and sliced cherry tomatoes
